Lentil and peeled tomato soup

Ingredients :
- 250 g of red lentils
- 400 g of PLANT whole peeled tomatoes
- 1 onion
- 2 cloves of garlic
- 1 tbsp olive oil
- 1 tsp curry
- 1.5 L of chicken stock
- 100 mL of coconut milk
- Salt & Pepper
Preparation :
Heat the oil in a Dutch oven and sauté the chopped onion and garlic cloves until lightly browned.
Add the lentils, peeled tomatoes and the tsp of curry, before covering with chicken stock.
Bring to a boil then simmer for at least 30 minutes.
Add salt and pepper.
Blend and add the coconut milk. Season to taste.
