
Omelette with
vegetables and
concentrate of
tomato

Ingredients :
- 150 g of potatoes
- 1 red onion
- 1 red pepper
- 3 tomatoes
- 3 eggs
- 1/2 tbsp of BIO PLANT Double Tomato Concentrate
- 20 g grated parmesan
- Tabasco (optional)
- 1 lemon
- 1 red chili pepper (optional)
- Olive oil
- Salt & pepper
Preparation :
Cut the potatoes into cubes of about 1 cm. Brown them in a pan with a drizzle of olive oil, salt and pepper.
Dice the pepper, onion, and two tomatoes. Sauté the pepper and onion with the potatoes for about 15 minutes. Then add the two chopped tomatoes.
Beat the eggs in a bowl and pour them into the pan of vegetables. Brown them, then add the red chili pepper.

Blend the last tomato with the tomato puree (concentrated), Tabasco, lemon juice and red pepper.
Flip your omelet and serve it with the chili sauce on the side.
