Tomato granita

Ingredients :
- 400 g of PLANT whole peeled tomatoes
- lemon juice
- 2 egg whites-
- Basil
-1 tsp olive oil
- Thyme
- Salt & pepper
Preparation :
In a bowl, pour the lemon juice and strip the thyme leaves. Also add the chopped basil and olive oil.
Place the peeled tomatoes in a blender bowl and blend them. Season with salt and pepper.
In a bowl, whisk the egg whites with a pinch of salt until stiff. Gently fold them into the blended tomatoes.
Divide this mixture into glasses and place them in the freezer for around 3 hours.
Serve chilled
