Ratatouille Niçoise

Ingredients :

- 400g of crushed PLANT tomato pulp

- 2 eggplants

- 2 zucchinis

- 1 red pepper

- 1 yellow pepper

- 2 onions

- 3 cloves of garlic

- Olive oil

- Salt, pepper

- Herbs of Provence

Preparation :

Dice the eggplant, zucchini and peppers

Sauté the onions and garlic in olive oil until translucent.

Add the chopped vegetables and sauté for a few minutes

Add the crushed PLANT tomato pulp, salt, pepper and add the herbes de Provence.

Slice the onions and garlic

Simmer over low heat for 40 minutes, stirring occasionally
