Ingredients :
- 8 previously prepared meatballs (pork, beef, garlic, parsley, onions, etc.)
- 200 g of peppers (red, green, yellow
- 300 g of PLANT crushed tomato pulp
- 3 chopped shallots
- 1 clove of garlic
- 5 whole eggs
- 4 tbsp olive oil
- 1 tsp red pepper
- 3 to 4 tbsp cashew nuts
- A few fresh parsley leaves
- Salt & pepper
Preparation :
Brown the meatballs in olive oil with the shallots, garlic, and parsley for 10 minutes. Season with salt and pepper.
Add the sliced peppers, crushed tomato pulp, and cashew nuts. Simmer over low heat for a few minutes, stirring to blend the flavors well.
Make small wells and crack the eggs. Season with salt and pepper. Cook for 10 minutes, covered. The whites should be cooked through. Serve immediately.
